5 Quick and Healthy Vegan Snack Ideas:



Last month, I joined PETA's Veganuary challenge, during which time I got the chance to experiment in the kitchen with some quick and easy vegan snacks. Here are my top 5 that I enjoyed the most!




1. Berry Burst Smoothies:

The ingredients I use:

1 banana

1 handful of raspberries

1 handful of red currants

1 handful of blackberries

This smoothie recipe is quick, easy and delicious. It was a perfect breakfast to start my day with or just a lovely pick me up mid day. A dash of almond milk or a few tablespoons of Alpro vanilla yogurt help thicken the smoothie to give it more texture if you're after a more filling snack.



2. Raspberry + Vanilla Chia Pudding:

Ingredients used:

5 tablespoons of Alpro Vanilla Yogurt

1 handful of raspberries

1 tablespoon of flax seed

2 tablespoons of chia seeds

For this recipe combine the yogurt and chia seeds in a bowl. If you like a little extra sweetness, add a drizzle of maple syrup. Stir the mixture to break up any clumps, then allow the pudding to set in the fridge for 1-2 hours, or overnight if you prefer your pudding thicker. To finish, sprinkle some flax seed on top and add the raspberries.



3. Buffalo Hummus:

Ingredients used:

1 small bowl of hummus

A dash of Tabasco hot sauce

1 celery stick, chopped

1 carrot, peeled and chopped

Pitta bread, lightly toasted

Combine a generous amount of hot sauce and hummus in a small bowl, peel and chop the carrots and then the celery. Toast the pitta bread lightly and cut into triangles to serve.


4. Guacamole and Nachos:

Ingredients used:

1 avocado

A dash of Tobasco

1 handful of cherry tomatoes

1 bag of tortilla chips

Chopped jalopenos

Mash the avocado in a bowl and then add hot sauce and the chopped cherry tomatoes. I love to sprinkle some chilli powder on my tortilla chips to get an extra kick of flavour and then add some jalopenos for even more!




5. Oven Roasted Tomato Bruschetta:

Ingredients:

2 slices of sour dough toast

1 can of chopped tomatoes

Red wine vinegar

Basil

Green pesto

Toast the sour dough and spread with green pesto. Combine the chopped tomatoes with red wine vinegar and top the sour dough bread with it. Garnish with some basil leaves and enjoy!


I really hope you enjoy these snacks and feel great about eating them. By eating even one vegan meal a week you're being an environmentally conscious human being! Happy snacking x
